Typical / Organic Geographical Indication The cultivation of grapes respects the principles of organic farming in accordance with EEC regulation 2092/91. The grapes that make up Villa Cocceia are Sangiovese and Cesanese, Sangiovese are harvested in September and Cesanese in mid-October. Fermentation takes place in stainless steel tanks at a controlled temperature of 25 ° C and by inoculation of selected organic yeasts. The maturation takes place in steel and immediately after in the bottle for about a year.
