HISTORICAL NOTES Unlike the Merlot variety already present in the Agro Pontino, Cabernet Sauvignon and Petit Verdot represent the first tangible evidence of the viticultural experimentation, begun in 1985, which demonstrated its positive adaptation to the Pontine microclimate. “Madreselva” takes its name from a sylvan climbing plant with a sinuous bearing with flowers formed by clusters of multicolored bluebells, which fill the undergrowth of the Pontine area with scents. GRAPES AND VINIFICATION It is a blend of equal parts of Merlot, Cabernet-Sauvignon and Petit Verdot. The grapes that make up Madreselva are harvested in full ripeness, but at different times. Those of Merlot ripen in mid-September, while the Cabernet Sauvignon and Petit Verdot grapes are rather late. The red vinification of each variety of the blend has a different procedure, as described in the preceding varietal wine sheets. After fermentation, the wines are placed in small oak barrels for 18-20 months, during which the necessary decanting takes place. Assembly follows in the aforementioned proportions. Refinement in the bottle lasts 8-12 months.
