The grapes that make up Abbazia di Novacella’s Praepositus Pinot Nero Doc are Pinot Noir. The vines grow on a porphyry-based soil. The fermentation of the grapes takes place at a controlled temperature (max 28 °) in stainless steel, with maceration on their skins for a period of about 15 days. 10% of the grapes are whole. The malolactic fermentation and the following maturation take place in French Barrique and Tonneux for 24 months. The wine ages for a further 36 months, 12 of which in the bottle, before being put on the market.
