Controlled designation of origin During the production of Sordo Barolo Monprivato, the grapes are first destemmed and then pressed. The winemaking takes place with fermentation in stainless steel tanks at a controlled temperature with long submerged cap maceration for 4-7 weeks. The natural malolactic fermentation takes place at a temperature of 20° C, subsequently it is stored in stainless steel for 2-4 months. Aging takes place in 24 months in oak barrels. While the refinement takes place in stainless steel for 4-6 months and subsequently in the bottle for 6 months.
