The grapes used to make Cà Di Rajo’s Prosecco Doc Rosè Treviso Millesimato Brut are Pinot Nero and Glera. The vines belong to the Cà Di Rajo area, near San Polo di Piave. The soils are clayey, sandy and gravelly. During the processing of the prosecco, the pressing is very soft, the production technique is the long Charmat. Neither malolactic fermentation nor refinement is performed. Maturation takes place 60 days before being put on the market. The Perlage is very fine and persistent.
