Cabernet Sauvignon Casale del Giglio 2019

HISTORICAL NOTES Vine of Bordeaux origin mainly cultivated in the Médoc areas. It is undoubtedly one of the most renowned varieties in the world for the production of wines of great quality and longevity. It is often used in blending with Cabernet franc and Merlot. In Italy there are many versions, both in purity and with other red grape varieties. It has great ability to adapt to the most disparate climatic conditions, maintaining its recognizable characteristics, while also perfectly expressing those of the terroir of origin. GRAPES AND VINIFICATION Produced exclusively from Cabernet Sauvignon grapes, selecting the most mature ones, with low yields per vine. Red vinification with punching down during the maceration phase, in order to extract color together with most of the polyphenolic substances. Once the tumultuous fermentation is completed, the new wine is kept in contact with the skins for a few more days, to facilitate the extraction of the more minute tannins thanks to the presence of alcohol. After careful racking, with handling of the draining pomace only by gravity, the malolactic fermentation in the tank follows. Having thus reached biological stability, it is then left to mature in small oak barrels for 18-20 months. Refinement in the bottle for 8-12 months follows.
