The grapes that make up the Gancia Cuveè 36 Alta Langa brut are the Pinot Noir and Chardonnay grapes. The must for each pressing and batch is fermented both in barriques and in steel tanks at a controlled temperature until the cuvèe is prepared and subsequently the draft is not carried out, for the second fermentation. The second fermentation takes place with the inoculation of yeasts selected by the master shipyards of Casa Gancia. The sparkling process takes place with the Traditional Classic Method in the bottle for at least 40 days. It is then left on the lees for a period of 36 months in the cool cellars of Casa Gancia at a controlled temperature.
