Kaltern Kalterersee Classico is produced only with Schiava grapes, coming from the vineyards surrounding Lake Caldaro. The bunches are harvested from the beginning of September until the beginning of October. Fermentation takes place on the skins with maceration that lasts 1 week at a controlled temperature of 24 ° C. The malolactic fermentation and aging on the fine lees takes place in steel tanks and concrete barrels for about 4 months, making this red wine elegant and fine.
