Thanks to the optimal climatic conditions, the Saltern Pinot Noir harvest took place at the end of summer, harvesting only the healthy and ripe grapes. Fermentation takes place in oak vats with maceration at a temperature of 25 ° C for two weeks. Malolactic fermentation and subsequent maturation take place in barrique and tonneux for about 12 months, lightly filtered before bottling.
