The harvest began on September 4th and ended at the end of October. Once only the ripe and healthy grapes have been selected, they are softly pressed in part whole and in part de-stemmed and macerated. Decanting and fermentation are slow and at a controlled temperature of 16 ° C. The maturation is carried out on the fine lees in steel tanks (10% in large wooden barrels) for a period of 5 months. In March it is lightly filtered and then bottled.
