For the production of Livio Flluga Illivio, the grapes are gently de-stemmed and left to macerate for a short period, then they are softly pressed and the result is clarified by decanting. The must obtained is fermented in small French oak barrels at a controlled temperature for a period of 10 months. Once the fermentation is over, the wine is kept on the lees in small oak barrels for about 10 months. The wine ends its refinement in the bottle in thermo-conditioned rooms.
