The Mirabella Demetra Pinot Bianco is produced by the Mirabella winery, in the Franciacorta area. It is made only from grapes from the Pinot Blanc vineyards. These grapes are the first to be harvested due to their rapid and early ripening. The bunches are harvested when fully ripe and deposited in small perforated boxes. During the manufacturing process, the vinification takes place on the yeasts at a controlled temperature of 16-18 degrees in concrete tanks. Refinement in the bottle lasts at least 24 months on the lees.
