Controlled and Guaranteed Designation of Origin The variety of grapes that make up this wine are the “Nebbiolo” grapes, these grapes grow on soils rich in limestone, gray marl and sands. The harvest is done carefully by hand, only the best bunches are chosen and a delicate crushing-destemming follows. The vinification is traditional and the maceration takes place for a period of at least 15-18 days, with gentle wetting of the cap. Refinement and aging takes place in 25hl Slavonian oak barrels for 18 months and, before being put on the market, it refines a further 12 months on the bottle.
