The grape selection is extremely rigorous, only healthy and ripe bunches are harvested. The pressing is extremely slow, the grapes are pressed whole. The spontaneous fermentation of the unfiltered must takes place in 500 L oak barrels and in large wooden barrels. The maturation on the fine lees takes place in 10 months in wood and with continuous bâtonnage.
