The name Satèn derives from its soft taste like silk. During the grape harvest, the 18-year-old bunches of vineyards are carefully selected. Only the golden bunches exposed to the sun are chosen for the production of Satèn. During processing, the pressing is delicate. Fermentation takes place on selected yeasts and at a low and controlled temperature. 10% of the basic Franciacorta is aged in 6 months in French oak barrels. Refinement takes place in piles in contact with the yeasts for a period of more than 36 months, plus a further 3 months of rest after disgorgement.
