Controlled Designation of Origin The Sauvignon grapes “Ronco del Cerò” are hand-picked and de-stemmed between August 30th and September 19th. Following the harvest of the grapes, these are macerated at a controlled temperature of 10 ° – 12 ° for about 20 hours, in special containers protected from oxygen with innovative systems that allow to reduce the intake of antioxidants. The must ferments and ages on the lees in large wooden barrels and in steel containers for about 6 months. The wine is bottled and then assembled at the full moons between March and July.
