To produce Livio Felluga Sossò, once the grapes have been de-stemmed, they are subjected to crushing. Fermentation takes place at a controlled temperature and in stainless steel barrels and truncated conical vats. Frequent pumping over is performed for about 3 weeks to extract color and aromas from the skins. Once the racking has taken place, the wines are assembled and decanted into small French oak barrels where they rest for 18 months. Placed in the bottles, they are aged for a further 18 months in thermo-conditioned rooms.
