The harvest of Sauvignon Banc began on September 4th and lasted until the end of October. The harvested grapes, after a strict selection, are de-stemmed and cold macerated for about 10/18 hours. It is then softly pressed and then the must is left to decant naturally. Fermentation takes place at a controlled temperature of 16 ° C. 20% of the product is placed in large barrels. The maturation instead takes place on the fine lees for about 5 months. Filtering and bottling takes place around March.
