Don Papa takes its name from Papa Isio, a great national hero in the war of liberation of the Philippines from Spanish domination. This rum is produced on the island of Negros, near Montè Kanlaon, an active volcano in the Philippines. Here it ages and ages in American oak barrels for 7 years. The rum features a delicate aroma with smooth and rich flavors. During the manufacturing process it is distilled according to tradition and charcoal filtered. In this way it is deprived of tannins and impurities. It is made up of large quantities of raw materials, such as sugar cane, grown on the island of Negros. The terrain there is volcanic and the equatorial climate is humid and warm. This makes brown sugar one of the sweetest in the world.
