Animardente is a wine produced in the Etna area, in Sicily. In particular in the Contrada di Santo Spirito property, here the vineyards extend for several hectares on a volcanic soil with pebbles, gravel, sand and ash. The cultivation of the vines takes place with the sapling method. The grapes are harvested manually by a specialized team. As for the vinification it takes 15 days, with continuous pumping over at a controlled temperature. The aging takes place in large barrels for 18 months while the refinement lasts 6-8 months. The wine fully represents the characteristics of these lands.
