Chardonnay and Pinot Noir grapes are used for the production of Gancia A.Langa Pas Dose. During the production process, the grapes are pressed very softly and carried out through the Marmonnier press. Inside the historic cellars of the early nineteenth century, the must is fermented in barriques and in steel tanks at a controlled temperature. As for the sparkling wine, it takes place with the Traditional Classic Method and the fermentation in the bottle lasts about 40 days. The refinement, on the other hand, takes place for at least 36 months in the cool cellars of Casa Gancia at a controlled temperature.
