The harvest of the grapes that make up the Kaltern Moscato Giallo takes place in the period from September 4th to the end of October. The selection of the grapes (Moscato Giallo) is done scrupulously, only perfectly ripe and healthy grapes are chosen. Once de-stemmed, it is brought to cold maceration for about 12 hours, after which it is softly pressed. Decanting takes place naturally and fermentation is carried out at a controlled temperature of 18 ° C. The maturation takes place on the fine lees in steel tanks for about 3 months.
