The selection of the grapes (Pinot Nero, Pinot Bianco and Chardonnay) and the harvest are done strictly by hand. Only the best bunches of the Mirabella Cru are selected. The pressing is soft and progressive. Fermentation takes place with selected yeasts and concrete tanks. The Chardonnay matures and ferments in small oak barrels with Batonnage for 4/5 months. Refinement takes place on the lees for at least 100 months.

Description
Colore: Rosa antico, con sottili sfumature bronzate
Profumo: Ricco, nella tipica fragranza dei lieviti, chiare note di piccoli frutti rossi, a cui fanno seguito note speziate e di bacca di vaniglia.
Gusto: La non dosatura lo rende dritto e asciutto, lungo affinamento, sottofondo avvolgente. Al frutto croccante seguono i sapori di spezie, tra cui spiccano lo zafferano e il pepe bianco.
