Mirabella Edea Brut is produced in the Franciacorta area of Lombardy. The harvest is manual, only the healthy and perfectly ripe bunches are chosen, they are collected in small perforated crates. It is made from grapes of the Chardonnay and Pinot Bianco vines. During processing, the pressing is soft, with very low yields of around 65%. Fermentation takes place with selected yeasts at a controlled temperature of 16-18 ° C in concrete tanks. Aging takes place for about 24 months on the lees in the bottle. Disgorgement takes place at least 3 months before being marketed.
