L’Ornellaia is a red wine produced in the 2007 vintage, in the heart of Bolgheri, in Tuscany. It is made up of Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. All this gives this wine a unique harmony. Once the grapes have been harvested, they are first selected and then subjected to a soft pressing. Each variety was vinified separately from the others. During the fermentation process which took place in stainless steel vats at 26-30 °, maceration followed for 10-15 days. As for the malolactic fermentation, it took place in oak barriques in the Tenuta Ornellaia cellar. The assembly is then carried out after the first 12 months and then reintroduced into the barrique for another 6 months. The wine then remains in the bottle for 12 months before being sold.
