Toscana IGT Denomination The grape needed to create Antinori Tignatello (Sangiovese, Cabernet), is carefully selected respecting certain criteria. How much it has been exposed to the sun and the strength of the plants from which the clusters are picked are among them. In this way, it is only the best grapes and at their maximum potential that carry out the fermentation process with particular care. Fermentation will be carried out at a controlled temperature between 27 ° C and 31 ° C without ever exceeding them, preserving the olfactory sensations and the fruit’s capabilities to the maximum. After the racking operation and the finished alcoholic fermentation, the wines are placed in oak barrels to carry out the malolactic fermentation. At the end of the MLF, the Antinori Tignatello is assembled and left to rest strictly for 12 months in barrique, where it is periodically decanted and tasted until it is bottled. A characteristic that few people know is that before being put on the market, however, Tignanello makes a further year of aging in the bottle.
