This organic sparkling wine is produced in Torre degli Alberi, in the hills of Oltrepò Pavese. Here the climate is mild, dry, breezy, ideal for growing vineyards. The production of sparkling wines in this area follows organic farming methods, using organic manure. The grapes are harvested by hand and deposited in small boxes. During the manufacturing process the vinification is slow and soft and the maceration takes place on the skins. As for the aging on the lees it lasts 36 months
