Controlled Designation of Origin Salice Salentino is produced by the Varvaglione winery, in the area of Salice Salentino, Guagnano and Campi Salentina. It is made from grapes from the Primitivo and Malvasia Nera vineyards. Here the climate allows it a luxuriant growth and a perfect ripening. After being harvested by hand and carefully selected, the grapes are immediately transferred to the cellars. In this way the organoleptic properties are not lost. During the manufacturing process, the vinification takes place with maceration at a controlled temperature at 26 ° C -28 ° C. After malolactic fermentation, the wine is aged in French and American barriques for at least 10 months.
