For the production of the 600 Uno Concilio Trento only Chardonnay grapes are used, coming from predominantly calcareous soils with excellent exposure. The grapes are harvested towards the second half of August, are de-stemmed and left to macerate on the skins for 10/12 hours. The must is naturally decanted. Finally, fermentation takes place with the addition of selected yeasts at a controlled temperature of about 14-16 ° C. The second fermentation is slow and takes place in the bottle in the spring. The refinement takes place on the yeasts for at least 30 months, giving the Trento Doc characteristic sensory notes, made even more evident in the nature or zero dosage type. The perlage is fine and persistent.
