The harvest began on September 4th and ended only at the end of October. The ripe and perfectly healthy grapes are de-stemmed and brought to maceration. The maceration takes place cold for about 10-18 hours, then it is pressed softly and the natural decantation of the must is expected. Fermentation takes place slowly and at a controlled temperature of 18 ° C. The maturation takes place on the fine lees (50% in tonneau and large wooden barrels), in March instead we proceed with light filtration and then bottling.
