Sauvignon Blanc was introduced in South Tyrol together with Semillon towards the end of the 19th century. But unlike Semillon, Sauvignon Blanc immediately found itself at ease in the land of Trentino-Alto Adige. The grapes were harvested from the beginning of September until the first weeks of October. Only ripe and perfectly healthy bunches are selected. Once de-stemmed, they are cold macerated at a controlled temperature of 10 ° C for about 8-10 hours, soft pressing and natural decantation. Fermentation takes place at a controlled temperature of 16-18 ° C. Maturation takes place on the fine lees in steel tanks for 4 months.
