Santa Maddalena comes from the indigenous Schiava grapes. They were harvested from September to the end of October. The fermentation on the skins with maceration lasts about 7 days at a controlled temperature of 28 ° C. Mololactic fermentation and maturation take place for 4 months on the fine lees, in steel tanks and concrete barrels.
