Kaltern Soll Pinot Grigio is part of the Cantina Kantern, in the Trentino Alto Adige area. The harvest begins on September 4th and ends at the end of October, only the ripest and healthiest bunches are chosen. The whole grapes are softly pressed. Fermentation is slow and at a controlled temperature of 18 ° C, 50% takes place in large wooden barrels. The maturation is done on the fine lees for 5 months. Before being bottled in March, the wine is carefully filtered.
