For the production of Mirabella Elite Extra Brut only Chardonnay grapes are used. The clusters are golden and well exposed, picked only at the perfect degree of ripeness. During the rigorously hand-made vinification, only the best bunches were chosen during the filling phase of the press. The yield of pressing is 50% and fermentation takes place at a controlled temperature. No preservatives or added sulphites were used.
