Denomination of Tuscany IGT The bunches of grapes are harvested by hand in crates of 15kg each. The bunches of grapes are selected manually on a double sorting table, the first selection takes place during de-stemming and the second after being de-stemmed. They are then softly pressed. The fermentation takes place in stainless steel tanks and in cement tanks, small quantities also ferment in cask. The extraction takes place with a few pumping over at controlled temperature of 25 ° C , this happens because the berries are small and a high concentration of fruits . In this way, fresh and vibrant aromas are also preserved. The maceration times are short , maximum 21 days. Mololactic fermentation begins in new oak barriques , keeping the different batches separate, this for the first 12 months, then the wine is blended and reintroduced into the barriques for another 12 months, for a total 24 months . The screed then once bottled continues aging for another 12 months , before being put on the market.
