It is an important white wine. A careful selection of the best Sauvignon Blanc grapes is born. The grapes are harvested at the peak of their maturity, when the balance between sugar and acidity is at the optimum point. The pressing is soft with short skin maceration. The sedimentation of the must is static, decanting and fermentation take place only with selected yeasts at a controlled temperature. The refinement takes place in concrete jars for about 7 months on its own yeasts and before being put on the market it refines a further 2 months in the bottle.
