The grapes used to produce Quintessenz Sauvignon have been rigorously selected to be healthy and ripe. The grapes are pressed extremely slowly whole. The spontaneous fermentation of the unfiltered must takes place in oak barrels of 500 and in large wooden barrels. The progressive maturation takes place in wood for 10 months on the fine lees with continuous bâtonnage.
