Controlled designation of origin The Sordo Nebbiolo D’Alba Valmaggiore is produced in the historic Sordo winery. Located in the Piedmont area. The grapes are harvested in their maximum maturity, de-stemmed and softly pressed. After these operations, a “tumultuous” fermentation follows at about 28 ° C in stainless steel tanks. The fermentation of the must follows, which remains in contact with the skins and pips, as tradition dictates. After racking, the maturation takes place in large Slavonian oak barrels for about 9 months and immediately afterwards a short period of aging in the bottle follows.
