Controlled designation of origin The grapes are harvested in full ripeness in Verduno, a village in the province of Cuneo between the end of September and the beginning of October. As soon as they arrive in the cellar, the grapes are sent for vinification. It is pressed and de-stemmed. Fermentation takes place at a controlled temperature of 28 ° and lasts for about 10/12 days. The vinification takes place in stainless steel tanks and is left to rest in the bottle before being put on the market.
