The cultivation of the grapes used respects the principles of organic farming in accordance with EEC regulation 2092/91. As for the processing of the grapes, it is fermented with indigenous yeasts, in steel and aged in tanks for about 7 months. This is followed by another 6 months of bottle aging. This wine represents the greatest enological expression of the area. Tenuta Colfiorito is located near Rome.

Colore: Rosso intenso con riflessi violacei
Profumo: sentori di bacche, frutti rossi e marasca
Gusto: Fresco, divertente, un ottimo supporto fruttato, tannino che è in perfetta misura, alcolicità tipica del Cesanese, ma non appesantisce.
