The denomination of controlled origin “Trento” identifies the wine-growing Trentino and requires the use of the classic method of refermentation in the bottle, as the only production method. Only Chardonnay grapes produced in vineyards with excellent exposure and suitability are used, planted on the hills around the city of Trento. The grapes are harvested strictly by hand. Once de-stemmed, they are left to macerate on the skins for 10/12 hours. The must is decanted in a natural way, becoming clearer. Fermentation takes place at 14-16 ° C, adding selected yeasts, then it is left to rest on the yeasts for at least 3/4 months before the “tirage”. In the spring the cuvée is made and the base wine is prepared for the second slow fermentation and the following refinement in bottle on the lees for at least 30 months. The foam is fine but lively.
